A Kettle Sour Ale with a single culture, lightly spiced with Japanese Furikake seasoning (toasted sesame seeds, black sesame seeds, white sesame seeds, dried Yuzu citrus zest, sea salt, and green nori flakes). Wakame added to the kettle provides a supporting layer of salt found in Gose-style ales. We then added 100% Yuzu juice to accentuate a tart citrus finish.
There is a lot going on here but don’t be fooled, we delicately layered the ingredients in based on taste-testing throughout the brew!
