Ingredients for Pineapple Salsa: (Makes 4 cups)
1 Pineapple
1 Red Onion
1 Red Pepper
2 Juiced Limes
3 Cloves Garlic
1 deseeded Jalapeno
2 Tbs Chopped Parsley
2 Tbs Chopped Mint
Salt and Pepper to taste
Directions for Pineapple Salsa:
Chop everything and combine!
Ingredients for Breaded Shrimp:
2 cups flour
2 Tbs Black Pepper
3 Eggs
1 Cup Panko Bread Crumbs
1 Cup Shredded Coconut Sweetened
2 pounds of shrimp
Directions for Breaded Shrimp:
Set up a breading station with three bowls. 1 bowl with 3 whipped eggs . 1 bowl with 2 cups of flour and 2 tablespoons of pepper mixed and the 3rd bowl with 1 cup panko bread crumbs and 1 cup shredded coconut sweetened. Dip shrimp in egg, then flour, then coconut. Put shrimp in the freezer for 15 minutes and then fry shrimp in any oil at 350 degrees for 5 minutes!
